A delicacy originally from the Gruyere district of Switzerland, this cheese is best known as a key fondue ingredient. This Austrian version offers all you'd expect in an Alpine Gruyere-- it is delightfully nutty, spicy, full-flavored, and aromatic when melted. A whole wheel weighs approximately 80 pounds, and it takes over 700 pounds of milk to make a single wheel. We recommend this cheese be diced into salads, melted in a hot sandwich, or blended into a piping-hot pot of cheese fondue.Made from pasteurized cow's milk.Photo depicts whole 80 lb. form of cheese. We cut and wrap this item by hand.

This goat's milk cheese was once produced solely in the Garrotxa area of Catalonia. This is the area of the Pyrenees mountain region of Spain that is farthest to the East, lying right on the shores of the Mediterranean Sea. Garrotxa has a white interior, with a very creamy texture that is surrounded by a natural mold rind. It has an unusual but mild flavor with a light acidity and a hint of hazelnuts. It melts very smoothly, but we like to eat it out of hand. It is sure to become a new Spanish favorite.Made from pasteurized goat's milk.Photo depicts whole 2 lb. form of cheese. We cut and wrap this item by hand.
For some, the tangy bite of goat cheese can be too strong, but for others the unique flavor has an irresistible allure and that tang is the best part. For those fans, Rosy Goat was created. Rubbed with chopped rosemary and aged for 45 days, Rosy Goat (known as Caprillice in Spain) maintains a soft texture with a full goat-y flavor that is wonderfully accented by the resinous rosemary.
igourmet Caveman Blue by Rogue Creamery (7.5 ounce)
Manufacturer: Rogue Creamery
Caveman Blue is a fruity, raw milk blue with slight vanilla tones and a texture full of butter and calcium lactate crystals. On the finish, Caveman has nuances of bacon, grass, and hay. Caveman is lower in moisture with a fudge-y texture, making it perfect for crumbling. It is aged about a year and has a natural rind. The brand Caveman Blue was used by the Rogue Gold Cheese Co. from the '40s until the late '90s. The tag line was "aged in the domain of the cavemen." Rogue Creamery actually built an entirely new aging cave to get Caveman's rind just how they wanted it. It's a bold step away from their classic foil-wrapped blues and a delicious testament to how far American cheeses have come in the last decade.
From the makers of Jarlsberg® Cheese comes Ridder, the Norwegian word for "Knight." Ridder goes to battle with a creamy, rich, distinctive flavor and is often compared to French cheeses like Port Salut or St. Nectaire. Like those, it is semi-soft with little or no holes. But, unlike its French counterparts, Ridder has an edible washed rind. Considered by some to be the most elite Norwegian cheese, Ridder is an ideal table cheese and pairs well with a light, fruity wine.Made from pasteurized cow's milk.Photo depicts whole 4 lb. form of cheese. We cut and wrap this item by hand.
