Previously, we doubted that any cheese could be more flavorful than Beemster's 18-month Aged Gouda, but their X.O. indeed sets a new bar. With this 26-month gouda, we first noticed its delicate, brittle texture. Dairy Co-op Santa Rita consists of eight family farms located at Pompeano and Selva of Serramazzoni in the Modena Apennini Mountain. All of the farmers belonging to the Co-op have been applying the methods of biological agriculture and zootechnics for the last ten years. Proper tillage, scrupulous feeding, care and wellbeing for the cattle, and the refusal of any genetically modified nourishment are basic for the daily management of the farms. The eight farms in the Co-op are located within a few kilometers of each other, so when the milk is delivered to the Co-op, it is in the very best condition. The milk from the evening is left to rest overnight in containers, letting the cream come to the surface in a natural way. This milk is partially skimmed in the morning and then mixed with the morning's whole milk. Only milk and rennet of organic origin are mixed in large copper kettles from which, after heating and coagulation, the wheels will be made. Every day, 10 wheels of Parmigiano Reggiano are made. For a kilo of Parmigiano Reggiano to be made, 17 liters of milk will be used. The cheese is immersed in brine for 21 days, then turned, cleaned and seasoned for 24 months.We had the good fortune to sample this cheese at the SANA in Bologna. We were bowled over by the incredible sweet, floral, fruity fragrance and the rich, pure flavor. There are many tales about Gorgonzola cheese's origin. This great Italian gourmet cheese from Lombardy was simply known as 'stracchino' or 'stracchino verde' in the early twentieth century; an Italian gourmet cheese made from the milk of cattle tired from their long spring and fall treks to and from the Alpine pasture. As the cheese grew in popularity, a more specific name was needed and the choice fell on Gorgonzola, one of the many villages where such cheeses were made. Young cheeses are sold as 'dolce' thus the final name Gorgonzola dolce. Gorgonzola dolce has a fragile rind which may have some powdery patches. The paste is white to pale yellow with greenish-blue veins. The texture is quite creamy; moister than Stilton and more buttery than Roquefort. We are sure you will enjoy this fine Italian gourmet cheese.
Family owned and operated, Bellwether Farms is located in Sonoma County, California, about an hour north of San Francisco, and a few miles from the Pacific Ocean. Carmody was inspired by the Callahan family's 1996 trip to Italy. There they had an opportunity to watch Gorgonzola being made near Milan. In one of the aging rooms there were small wheels of cheese on an out of the way shelf. The Callahan's tried a wheel and found it to be a very mild, creamy cheese with a great deal of fresh milk flavor. Although they never saw the cheese being made, they began to notice similar table cheeses wherever in Italy they bought cheese. They were marketed under a variety of names but meant for local consumption.Back at Bellwether Farms, it occurred to the Callahan's that a cheese of this type might appeal to customers in the US as an alternative to the young Cheddars or Jack cheeses that dominated the market. Cheesemaker Liam Callahan began working on the cheese by using a pecorino recipe as a starting point and making changes in response to the flavors and texture of the cheese. Eventually he found a combination that brought the family back to the cheese they tasted in Milan. Carmody is meant to highlight the buttery flavors of Jersey milk.
