Cablanca is an excellent 'entry level' goat's milk cheese if you want to try something different but are not so sure about the usually assertive taste of traditional goat cheese. Cablanca has the characteristic of goat milk but is milder than traditional unpasteurized goat's milk cheeses. This cheese has a delicate, citrus tanginess and firm but creamy texture and a snow-white color. This gourmet cheese is perfect to serve on a cheese platter, in salads, melted on toast, and tossed with cooked vegetables. Cablanca is also very low in cholesterol.
Produced by Jean Faups, le Montagne de Bethmale is one of the traditional gourmet cow's milk cheeses from the Pyrenees. Bethmale has a natural leathery, orange colored rind, due to being washed with b. linens. This gives the cheese it's aromatic smell. The paste is firm, scattered with pea-sized holes, with a mild, salty-sweet flavor.For many years igourmet.com has offered the goat's milk version of this cheese. We are now proud to offer this raw cow's milk version as well. Bethmale is named after the town where it is made, in a valley near Toulouse, which dates back to the 12th century. The ripening of the cheese takes about 2 to 3 months and during this period the cheese is brushed and turned frequently to develop the characteristic rind.
Produced in La Mancha in Central Spain, true Manchego is made from 100% sheep's milk. Cheeses from Spain are commonly made from sheep's milk because most of the territory is rocky and dry; unfriendly to cows but suitable for raising goats and sheep. The abundance of wild herbs on Central Spain's grazing lands gives Manchego a special taste and aroma. Its flavor is zesty and exuberant, while its texture is firm, but not dry. Manchego can be recognized by the zigzag pattern etched into its rind. This is created by the rippled surface of the press used in the production of the cheese. Underneath the inedible rind, the interior is ivory-colored with few small holes. Taste Manchego for the first time and you will be surprised at how long the wonderful flavor lingers on your palate. Dante used the phrase "Bel Paese" to describe Italy, which inspired Galbani's name for this Italian-style cheese. It is a semi-soft, uncooked, pressed pasteurized cow's milk cheese with a wax rind. Made in small discs, it is a pale, creamy yellow, and has small holes within its texture. Bel Paese has a mild, buttery flavor, similar to mozzarella but with more body and tang. A versatile cheese, Bel Paese is suitable for cracker-snacks or as a dessert cheese. It also melts well, making it perfect for casseroles or pizza. Bayley Hazen Blue is a natural-rinded blue cheese made with whole raw milk. Jasper Hill Farm makes batches every other day, primarily with morning milk, which is lower in fat than afternoon milk. Ayrshire milk, their specialty, is particularly well-suited to the production of blue cheese because of its small fat globules, which are easily broken down during the aging process. The paste of a Bayley Hazen is drier than most blues and the penicillium roqueforti takes a back seat to an array of flavors that hint at nuts and grasses and in the odd batch, licorice. Though drier and crumblier than most blues, its texture reminds one of chocolate and butter. Aged between four and six months, Jasper Hill developed this recipe by starting with a Devon Blue recipe, changing its shape, and altering the aging process to end up with an edible rind. Bayley Hazen is named after an old military road that traverses the Northeast Kingdom. The road, commissioned by General George Washington was built to carry troops to fight the English on a Canadian front.
